To people, to situations, to fear, to love. There is a desire to scream, cry, fight. There is a desire to break ties with strength and hope. Cut, untie, break. To be free! Chicken Shibari was born from a dream and a need.
The search for freedom and the liberation from the knots of everyday life became an iconic dish, to be eaten with your hands, tearing and freeing the flesh from the strings.
The recipe Doukou is chef Xin Ge’s exploration for marinating and cooking chicken. It is one of the four most famous recipes in China and is very ancient, dating back to the Qing dynasty (1661). Eight types of spices and herbs and a very concentrated broth to obtain a tasty and soft meat, to be enjoyed preferably cold. The scent of truffle arrives decisive and strong. Inside the chicken, an egg – a symbol of new life and becoming – awaits to be discovered and set free.
